
Effortless Rice Dish: A Back-to-School Solution from Our Editor-in-Chief

The transition back to school often plunges families into a whirlwind of activities. After a summer of relaxed routines, the sudden influx of school commitments, extracurricular sports, and social engagements can make evenings feel overwhelmingly busy. For many parents, including myself, managing multiple children with demanding schedules means constantly coordinating logistics, often leading to hurried exchanges and a desperate search for quick, satisfying meal solutions.
Ending a long, busy day with a chaotic dinner routine is far from ideal. To combat this, I've found solace in keeping a well-stocked pantry with versatile ingredients that simplify meal preparation. Microwavable rice has become a go-to staple, allowing me to bypass lengthy cooking times. I particularly favor the roasted chicken flavored variety, which adds a delightful depth without overpowering other ingredients, making it an excellent base for various culinary creations.
Inspired by the fried rice dishes my children adore at hibachi restaurants, I've adapted a similar recipe for our home kitchen. This back-to-school season, I'm bringing those beloved flavors into our weeknight meals, transforming a simple rice dish into something truly special and comforting for the whole family.
To begin, I heat a wok or a deep pan and add a generous amount of butter, minced garlic, about half a chopped onion, soy sauce, and a dash of oyster sauce. I let this mixture simmer until it becomes fragrant and the onions soften. While this is cooking, I prepare the microwavable rice and allow it to cool slightly.
Once the sauce starts to gently bubble, I incorporate the cooled rice, stirring everything together until well combined. I continue to cook the mixture until the rice achieves a slight crispiness, carefully monitoring it to prevent it from becoming too crunchy, which my younger son dislikes. Then, I push the rice to one side of the wok, add one or two eggs to the empty space, and scramble them until they are just set. Finally, I fold the cooked eggs into the rice, mixing thoroughly to create a delicious, cohesive dish.
Within a mere three minutes of the final integration, the meal is ready to be served. This swift preparation time is a lifesaver on evenings when every second counts.
The beauty of this recipe and the microwavable rice lies in its practicality. Firstly, it keeps exceptionally well and remains delicious even at room temperature, making it ideal for leftovers or on-the-go meals. Secondly, one package of rice perfectly satisfies my older son's growing appetite, while a second package is just right for me to share with my younger son. After years of my children being hesitant about rice, their newfound love for it has made these convenient packages a permanent fixture in my pantry.
